Spring or Autumn veggie risotto

This recipe is versatile and easy to make.
You can use basmati rice instead of risotto rice, as well as brown basmati or mixed basmati too.

Can swap the leeks for red onion too, or the spinach with kale or any other favourite green leaves. Just up to you!

So for 2-4 people ( as can be served as main or a stater) you will need:

1 whole leek ( or a big red onion, or 3-4 shallots ) – chopped 1 red chilli – chopped
2 cloves of garlic – chopped
1 vegetable stock

1 yellow pepper cubed
Bag of spinach– washed and drained, chopped
Small bunch of dill
2 small cups of rice (if cooking for 2 as main dish)- we suggest our organic varieties 4 cups of hot water
( not a bad idea is to use some white wine too)
Black pepper and salt to taste
A good pinch of smoked paprika

Sesame seeds
Hand-full cashew nuts
– put them on a tray or in a pan and roast for 10 mins

In a shallow but large pan ( could be a paella pan) add 4-5 spoons good quality olive oil and once hot enough, add the chillies and garlic. Be careful not to overcook or burn them.

Add the spices at that point and wait for half a minute.

Add the leek and cook for a few minutes till soft. Add the spinach and cook for another 5 minutes. Add the pepper and stir for a couple of minutes.

Add the washed and drained rice and stir well. Once the rice starts to look transparent on the edges add a cup of white wine or just the water that you have prepared beforehand. Add the stock ( cube or liquid) and stir it well.
If you added white wine, wait till the alcohol evaporates and then add the water.

Stir occasionally but not too often as you don’t want to become too mashy. If more water is needed add it little by little and keep tasting the food.
Once the rice is cooked and in has a little crunch still, it should be ready to be served. Chop some dill and sprinkle over it.
