Courgettes with Quinoa

This recipe is super easy and it doesn’t take too long to make. It is very suitable for quick, light lunch.

All you need is:
2 courgettes 
– halved and scoop out the middle and softer part -if you are making it for 2 people

might be enough just as a starter.

A cup of our Organic Quinoa – cook it following the instructions, we recommend to wash it well before boiling it. 1 cup of Quinoa should be boiled in 2 cups of water. Simmer for 10-15 minutes.

Cup and a half chopped mushrooms
1 large leek chopped small and fine
1 clove of garlic – chopped
2tbsp good quality olive oil
Handful chopped parsley
And handful walnuts
….don’t forget some salt, pepper and Pinch of Love

Prepare a shallow baking tray and switch the oven to 200 Degrees

In a frying pan add the olive oil and the chopped leek plus the garlic and cook till tender ( add water if needed).
Then add the peppers, the chopped courgette insides and the mushrooms, cook for a few minutes. Add the pepper and salt and stir in the cooked quinoa.

Stir in well and fill up the halves. Top them up with chopped walnuts or any other nut of preference ( pine nuts are great too).
Place them in the oven for 15 minutes and then sprinkle some chopped parsley.
